Chocolate Ganache Cake


There’s something truly enchanting about the soothing sound of raindrops tapping on your windowpane. It's as if nature herself is inviting you to slow down and savor the little joys of life. What pairs perfectly with the pitter-patter of rain? A warm cup of coffee and a slice of rich chocolate cake. This recipe, with its velvety texture and luscious ganache, is the ultimate indulgence you need after a long week.


Ingredients:


For the Cake:


  • 2 cups all-purpose flour

  • 2 cups sugar

  • 3/4 cup unsweetened cocoa powder

  • 2 teaspoons baking powder

  • 1 1/2 teaspoons baking soda

  • 1 teaspoon kosher salt

  • 1 teaspoon espresso

  • 1 cup milk

  • 1/2 cup vegetable oil or canola oil

  • 2 large eggs

  • 2 teaspoon vanilla extract

  • 1 cup boiling water


For the Ganache:


  • 1 cup of heavy cream

  • 1 ½ cups chocolate chips


Instructions:


For the Cake:

1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. You could also use a Bundt pan like I did.


2. In a large mixing bowl, whisk together the sugar, flour, cocoa, baking soda, baking powder, salt. Make sure the ingredients are well combined.


3. Add the milk, oil, eggs, vanilla extract to the dry ingredients. Mix until the batter is smooth and well blended.


4. Add the boiling water and mix well. The batter will be thin; don't worry, that's perfectly fine.


5. Pour the batter equally into the prepared pans or in one Bundt pan. Bake for about 30-35 minutes or until a toothpick inserted into the center comes out clean.


6. Allow the cake(s) to cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.


For the Ganache:

1. In a saucepan, heat the heavy cream over medium-low heat until it simmers. Be careful not to let it come to a boil.


2. Place the chocolate chips in the hot cream. And stir with a whisk until the chips melt and the mixture is smooth and glossy


Assembly for multiple layers:


1. Once the cakes have cooled, place one layer on a serving plate. Pour a generous amount of ganache over it.


2. Carefully place the second cake layer on top and pour the remaining ganache over it, letting it drip down the sides for that irresistible look. For Bundt cake, pour over entire cake.


3. Let the ganache set for a few minutes before slicing into this decadent creation.
