One Pot Chicken & Rice


Recipe Ingredients:


  • 1 package of chicken thighs or breasts

  • 1 onion

  • 1 red pepper

  • 1 1/2 Basmati rice

  • 3 cups chicken broth

  • 1 tbsp minced garlic

  • avocado oil

  • cilantro

  • Seasoning mix

    • 1 tsp chili powder

    • 1 tsp cumin

    • 1 tbsp soul food seasoning of your choice

    • 1/4 cardamom

    • 1/4 tsp coriander

    • 1 tsp cajun seasoning

    • salt and pepper to taste

Directions

  1. Start by seasoning your chicken with a dash of avocado oil and half of the mixed spices.

  2. Warm your dutch ove and add avocado oil.

  3. Once the oil is hot, brown the chichen on both sides (5minutes each side) and then remove from the heat. Make sure you have crispy skin!

  4. In that same oil, saute your onions and peppers until tender. Add a tablespoon of garlic and the remaining seasoning mix. Stir for 2 minutes.

  5. Add 3 cups of chicken broth and 1 1/2 cups of Basmati rice.

  6. Add the chicken back in and cook until rice is tender and has absorbed all the liquid.

  7. Garnish with cliantro and serve!
