Southern Style Cabbage with Bacon, Sausage, and Cajun Spices

Today, I'm excited to share with you a recipe that takes a classic Southern dish to new heights of flavor and comfort: Southern Style Cabbage with Bacon, Sausage, Onions, and a blend of robust seasonings.

Southern style cabbage

This isn’t just any cabbage dish; it's a symphony of flavors and textures that will have you coming back for seconds.

Cooking cabbage can be a delightful experience, especially when you know a few key tips to bring out its best flavors and textures. Here are some helpful tips for cooking cabbage:

1. Choose Fresh Cabbage: Look for firm heads with crisp, vibrant leaves. Avoid cabbages with wilted or browned leaves. Fresh cabbage will have the best flavor and texture.

2. Cutting Technique: How you cut the cabbage can affect its cooked texture. For quicker cooking, cut it into thinner strips. For dishes that require longer cooking times, like stews, thicker chunks are better.

3. Rinsing and Draining: Always rinse cabbage under cold water before cooking. After chopping or shredding, let it drain well to avoid adding extra water to your dish, which can make it soggy.

4. Avoid Overcooking: Overcooked cabbage can become mushy and release a strong, sulfuric smell. Cook it just until it’s tender.

5. Balancing Flavors: Cabbage has a naturally bitter flavor that can be balanced with acid like vinegar or lemon juice. A bit of sugar can also help counteract the bitterness.

6. Cooking Methods: Cabbage is versatile and can be steamed, boiled, sautéed, roasted, or even grilled. Each method offers a different texture and flavor. Sautéing or roasting brings out its natural sweetness.

7. Pair with Fats: Cooking cabbage with fats like butter, olive oil, or bacon fat can enhance its flavor and make it more palatable.

8. Seasoning: Simple seasonings like salt, pepper, garlic, and onions can greatly enhance the flavor of cabbage. Spices like caraway seeds or herbs like dill can also add interesting flavors.

9. Adding Liquids: If you’re braising or stewing cabbage, add just enough liquid (like broth or water) to cook it without making it soggy.

10. Quick Cooking for Nutrient Retention: If you're concerned about retaining nutrients, cook cabbage quickly. Steaming or stir-frying for a short duration helps preserve its vitamins and minerals.

Remember, the key to delicious cabbage is in the balance of cooking it just right and seasoning it to enhance its natural flavors.

Ingredients:

  • 1 large head of cabbage, chopped

  • 4 slices of bacon, chopped

  • 1/2 pound of sausage, sliced

  • 1 large onion, diced

  • 3 cloves of minced garlic

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 1 teaspoon Cajun seasoning

  • Salt and pepper to taste

  • Olive oil

  • Optional: Green peppers and red peppers

Southern Style Cabbage Instructions:

1. Prep the Cabbage: Begin by chopping your cabbage into slices. This allows it to cook evenly and absorb all the flavors we’ll be adding.

2. Cook the Bacon and Sausage: In a large skillet or Dutch oven, cook the chopped bacon over medium heat until it starts to get crispy. Add the sausage slices and cook until they are browned. This step not only cooks the meats but also releases their rich flavors into the pan, which we'll use to cook the vegetables.

3. Sauté the Vegetables: Remove the bacon and sausage, and in the same pan, add the diced onion. If needed, you can add a bit of olive oil. Sauté the onion until it becomes translucent, then add the minced garlic, stirring frequently to prevent burning. You could also add red and green peppers for even more flavor. If so, here's where you would add the sliced peppers.

4. Seasoning: Once the onions and garlic are sautéed, sprinkle in the onion powder, garlic powder, and Cajun seasoning. This is where the dish starts to develop its deep, complex flavor profile.

5. Cook the Cabbage: Add the chopped cabbage to the pan. Stir it well to mix with the seasonings and to coat it with the flavors of bacon and sausage.

6. Combine and Simmer: Add the cooked bacon and sausage back into the pan and about a cup of chicken stock. Reduce the heat, cover, and let it simmer for about 20-25 minutes, or until the cabbage is tender to your liking. Stir occasionally.

7. Final Seasoning: Taste and adjust the seasoning with salt and pepper as needed. Remember, the bacon and sausage already add saltiness, so go easy on the salt.

8. Serve and Enjoy: Serve this hearty dish hot. It’s perfect as a stand-alone meal or as a side dish for your favorite Southern main courses.

This Southern Style Cabbage dish is a wonderful example of comfort food at its best. The bacon and sausage provide a smoky depth, while the Cajun seasoning adds just the right amount of kick. It’s a simple recipe, but the flavors are anything but basic. Whether you’re new to Southern cuisine or a seasoned pro, this dish is sure to delight your taste buds.

I hope you enjoy making and savoring this dish as much as I do. Happy cooking!
